D7100 - how do I STOP it from bracketing?

You don't have to reset everything. Hold in the BKT button and turn the command wheel until it shows zero for the number of brackets on the top LCD screen. It's done the same way as when you initially set the number of brackets to 3 or 5.

Thanks, CO. I hadn't initially SET the number of brackets on purpose. But now I know how to set and unset. (-:

Owner's manual, page 135: To Cancel bracketing, press
the BKT button and rotate the main command dial until the bracketing progress indicator and BKT icon are no longer displayed.

Odd it was factory set that way. Or did you buy it used? I made that mistake with a used DSLR. I should have just Factory RESET everything but instead I spent months tweaking everything. I have no idea where that setting is on your D7100. For my three Pentax's it is all different for each. Annoying at times. Good luck. Someone on the UHH knows and will answer.
