Downeast Maine Haddock

After a nice afternoon hike in "downeast" Maine (on Great Wass Island - see http://www.uglyhedgehog.com/t-235057-1.html#3957721 ) one might be an hour from the nearest traffic light, but the small mom-and-pop cafes serve up a mighty haddock burger!
About a pound of haddock!
