I'm in no way an expert, but shoot in RAW 99% of the time. If you have Photoshop CS5 (and I think lower than that) you can use the RAW converter to recover some of the colors, etc. If you take in JPEG and have the camera settings right you don't need to worry. If you are happy with your pictures don't worry about it...and a lot depends on if your camera permits RAW shooting.
