Mainly your audience will be looking in various conditions and lighting. That means cell phones, monitors at who knows where, indoors and out, prints pretty much the same. So you can't control the viewing and each condition has color variables. So do it for what you like and I guarantee you that not one person will complain about your colors. If they like the subject they will love your photo.

What ever is comfortable to you.
I sit in an easy chair with my laptop, TV on.
Room has lots of windows (8) but I do it day and night. Walls are a very dark maroon and white ceiling.
No one has yet to complain about the colors or anything.

You can't go wrong with it.
And as you said get some good glass.
Just remember to make sure your lenses have the built in motor and have the electronic diaphragm. So if you decide to do any further upgrade in the future at least the lenses will work. Otherwise they will not work on the Z cameras.

Image litter here is 99% trying to show off on a very easy subject.
It seems like here, other sites for photos is mostly birds over and over. Other wild animals are by far more difficult to capture and require far more work or we would see more of them.
But here it is just showing off another me too bird photo.

Then why do virtually no pros use Nikon.
Nikon is about 13% of the photo market.
Why was Sony chosen for media companies over Nikon if Nikon is so good.
I still see a vast majority of White lenses and black lenses with the L stripe, second are white with no red stripe and rarely long black lenses on college and pro sidelines.
Also Canon dominates and Sony rental equipment at Lens Rentals.

Here is an excellent real world review by an unbiased reviewer.
Watch this all the way through and it should help you decide regarding the R8.
And again the 6D MII is pretty far behind the R series cameras.

As he says this is a review from over time use, not like a quick review of an hour or two allowed by the manufacturer.
Note that the R8 has the new multi function shoe that the R5 lacks and definitely the 6D MII lacks. Some new products coming out for the shoe will not work with the old standard shoe. The new shoe allows for wireless microphone instead of having wires hanging all over to get it to work. I believe that Sony has been doing something now for many years and Canon finally has done it as well.

Here is a review on the R8 by a reviewer that uses Sony, Nikon and Canon cameras.
Note his discussion regarding Auto Focus of the R8 vs Sony a1 and Nikon Z8 and Z9.

This camera should answer the question of 6D MII or R8. And it will seamlessly use all EF lenses 100% as well as RF lenses.

The OP seems to want a camera that is great all around.
Notice the birders fanboys feel driven to show birds here even though they all look like the last crane shown.
The OP is wanting Canon, yet all that is shown is Nikon and Sony fanboy photos of birds, which is incredibly boring to a vast majority.
To the OP as you look at reviews and your budget it might be best to go with the R cameras as they do have newer technology and best in class AF. Superb for children and grandchildren as well as pets like dogs and cats. The R8 is fast, and for a fraction of the cost, it shoots at 40 frames per second bs the Sony a1 maxes out at 30 frames per second. So a serious contender with latest technology would be the R8.
Read the reviews and see how many reviewers approached the camera negatively and by the end couldn't say enough praises for the R8 and saves big bucks.

While not exactly what you ask, I have a 6D first iteration and an R5. The R5 is hands down the best camera I have ever owned. As a canon guy I’ve had Ftb, F1, Eos A2, 5D as well as Maymia and Hasselblad and 4x5’s and even an 8x10. Probably 20-30 cameras over 50+ years. The R5 beats them all.
