Simple; expose for the highlights setting a narrow acceptance angle like spot metering. Then while viewing the image on your monitor, you can brighten the under exposed areas in any one of the post processing programs.
I have the same equipment and it has served me flawlessly. But what shoe on top of the flash are you referring to unless you're referring to the "hot shoe" on the camera. For off camera flash I use the OC-E3 "shoe cord". Once you are assured that the 580 flash is energized, then make sure all contacts between the cord, camera and flash are fully engaged.

Actually they're physicists proving that when you ignite tri-nitro-toluene, it expands rapidly to many times its original size! But I coulda told them that and saved them a lot of trouble!

Beautiful gal alright, but a bit too static facing the camera with a bit of over exposure from flat lighting - Needs a little contrast between the key and fill lights!

I have the Tamron 150 - 600 and am quite pleased with its performance on my Canon 60D. I recall that it was less costly than the equivalent Sigma. I found it to stack up well against the canon 100 - 400.
