Bottom feeders like myself are blessed right now, picked up my D850 last year from a local pro for $1k, it’s a hobby for me, a passionate one, but I’m fine with DSLR’s. I’ve also got MFT so mirrorless isn’t something I’m afraid of.
It does remind me of the onslaught of CDs during the 80-90’s. That’s when I got into vinyl, Linn TTs and high end cartridges were selling for Pennie’s on the dollar, mint fine records were cheap, funny thing is I sold almost all the analog stuff a couple of years ago for $$$, all things have their season. Mirrorless eats batteries at least that’s my experience and it seems my DSLRs always are ready to go, my Oly MFT not so much.

I’ve always been happy with my AF-D 80-400 f4.5-5.6, nobody ever talks about this lens, unless it’s to bad mouth it. The newer AF-S is an improvement, but for the money, on my D300S it is terrific. Not for sports or BIF, slow, but I’m happy

No you’re not crazy, one great benefit of the D700 is the opportunity to use so many F-mount FF lenses. VR isn’t generally necessary because of high ISO bringing up shutter speed, and they’re getting cheap.
They are also perhaps the most rugged camera I have used, and in 45 years of using every camera, that’s saying something., one of mine survived a drop of 4’ onto a highway, broke the lens hood, and that was all!
I have a D850 that did not survive a similar feat, but $340 got her back up and running, I will say that the D850 has truly spoiled me. I shoot med jpegs so the downsizing in camera adds a bit of noise reduction and 27mpx is still plenty.
I also have Oly 4/3, just a brace of first generation Em5’s, great for travel, and fun with different glass such as Voightlander Lanthars, Laowa’s etc not to mention a couple of earlier 4/3’s lenses.
Anyway, get a D700 and have some fun, your photography will improve, they are a joy to use, the AF-D lenses work wonderfully on her as well as the AIS, and the AF-S lenses too of course.

Fujifilm are the masters of dynamic range going back to the S-Pro 3 DSLR, a great camera through the X trans generation, unless I’m wrong they are the class leaders in APS-C and above

One camera is a 45MP full-frame camera, 8256×5504. The other is a 20MP full-frame camera, 5568×3712. Pixel Resolution is pixel resolution. File size is not pixel resolution. Isn't. Wasn't. Never will be.

The differences in price of the two cameras has nothing, nil, nada, zero, (0.0), to do with the respective pixel resolution of the two cameras.

The 'flagship' professional body, the D5, represents all the 'best' features of the Nikon line of DSLR cameras at that point of development, circa Jan 2016. The processing chip, the frames per second, the noise processing, the ISO range, the AF tracking capability, and most importantly: the all-weather resistance with an integrated battery grip and a shutter rated to 400,000 actuations.

The $6400+ initial pricing of Nikon's flagship represents all these features, especially that all-weather ruggedness, not the pixel resolution of the sensor. We see all these technologies flowing downward into subsequent DSLRs, priced lower, even with sensors at more than 2x the pixel resolution. But, we don't seen 400K shutters, integrated battery grips, nor this level of all-weather resistance.

These apex (flagship) cameras are built for everyday, all day usage in all weather conditions by working professional news & sports photographers. The 20MP sensor is purposely sized for 2-page magazine prints, although physical printing of magazines is kind of going the way of the Dodo bird. The D850 is developed also for working professionals, especially those making wall-sized prints and the UHH chattering class.

The OP is the first person I’ve encountered who also shoots the D850 at medium size jpeg, as I think the camera was meant to be used, the reduction of noise due to in camera downsizing helps contribute to the exquisiteness of the files out of the D850. Mine recently got damaged in an accident and I miss her dearly. I could only ever imagine owning another and if another used one comes up I will trade my D700’s in towards her.

To the point, I have a D850, cherish it; I think jpeg perfection comes out of that camera when shot medium jpeg, plenty of detail, and a nice shot of denoizing with in camera downsizing. Or shooting crop with my 80-400d.

I’ve got Oly ‘em-5(s) and Nikon D850, 700’s and have had the history of digital cameras, from Coolpix 5000.
The olys are terrific cameras and I hate using them. I need reading glasses and smaller fingers to operate them. I cannot remember what each Fn button does, the cameras are always accidentally changing something, unless the batteries are dead, which seems too often.
None of these things are the cameras’ fault, I’m too accustomed to a Nikon DSLR layout, I know where everything is and it is clearly labeled. I see little difference in 13x19 prints I do between FF and MFT, yet I swear my Nikon FF prints are somehow more impactful, could be subject matter too.
There’s no getting around that WYSIWYG is a terrific benefit.

I have used all versions of the 24-120 on both crop and FF, I have also owned the 28-300 for a short time. I found the 28-300 to be simply too large and I value the 24mm end more than the 300 thus I actually traded it in for the 24-120 f4.

It is a fantastic photo, a nice work of art. Fly fishing is more art form, tricking the fish, fighting the fish, then releasing it. You learn about your environment and get more of a sense of things.
Fly fishing is easy to learn and hard to master, it teaches patience. There are many activities similar, why take a photograph if there’s already pictures on the internet?
I shoot Olympic Recurve, harder than a compound bow, there’s art involved, form, patience, practice and reward. All great avocations require mental attachment.

It’s all about exceeding the nyquist limit to avoid using a filter on the sensor. Then downsize the 45mpx down and you suppress further any noise in your photo. It’s not necessary to use the full resolution unless you’re printing really really big

I shoot my D850 at Medium Jpeg for my work, its like 26 mpx, my belief is that once the sensor can resolve beyond the Nyquist limit that eliminates the potential for moiré, downsizing then gives you an exceptionally clean 26 mpx jpeg, still a bigger file than generally required. Of course I grew up on Kodachrome 64, and print film, the speed and detail of even the 12 mpx cameras was always enough for me and i still use a brace of D700's and I have no complaints about my D2X
