The GIMP learning curve is only steep if you try to learn everything at once. There are many excellent tutorials available online including the tutorials and manual at
www.gimp.org and from Pat David
https://patdavid.net/getting-around-in-gimp/.
The trick is to ask yourself, "what do i want to learn to do" and find a tutorial or YouTube video that teaches you how to do it. Practice the technique a few times and move on to the next topic. Many common tasks like crop, rotate, change brightness, contrast or saturation are simple commands or filters that you can apply and adjust. No learning curve at all.
You will eventually find plug-in and scripts that automate some more complex tasks, but those things can wait until you are ready for them. Just don't try to boil the ocean and you'll be fine. And if you forget how to do something, go back to the tutorial.
Enjoy,

Check out the program that came with your camera.
Faststone is intuitive, I still use it for my web stuff although I have a Lightroom/Photoshop subscription.
Light Zone is free. It also includes a free learning curve.

You must take Google Nik Collections to make your goal easier. GNC, you can say the perfect free plugins but you can also use them as standalone free photo editors. Here the YouTube channel of Google Nik Collections, you may weigh to learn them, simply.

So many programs to pick from. For a simple get your feet wet program, I would have to vote for FastStone Image Viewer. It has some basic adjustments to enhance your photos along with cropping, resizing, sharpen, blur, and others. It has one of the best clone and heal functions I have ever used. It is an all around great viewer and basic processing program for free. I use it a lot. Have a GREAT DAY.
Installed it last night....can you stitch in faststone? Looking around i didnt see anything and the help area isnt much help
