I’m thinking about getting a 27” Mac--does anyone have suggestions about moving my files, programs, photos, etc. form my 21” to the 27”?

Apple have simple migration routine that will connect the two devices and transfer data and programs. Also if you use iCloud the migration is even easier. Information is, I believe, on the Apple web site.

Same as with any other computer system. I did exactly that, and I used both flash drives and small external drives. I copied the files/folders to the drive and then copied them from the drive to the 27".

That will be easy. Your Mac Operating System includes a Migration App. The folks at the Apple Store will also help you when you purchase your new Mac. Make sure you have your old Mac with you though. You can migrate selectively or completely as desired.

This is a bit old, but essentially the same instructions. https://support.apple.com/en-us/HT204350 You don’t need external drives, flash drives or anything like that. It’s really simple.

Migration app. Ethernet cable between both Macs. Try that first.
In any case, be sure you have all third party software serial numbers and installation codes available. Some vendors may require you to deactivate the license on one machine before reactivating it on another.

I can transfer from my MacBook Pro to my IMac 27 via a thunderbolt connector. Apple support walked me through it.

Target disk mode can be handy. You boot the old Mac using cmd R i think and it then appears as just an external drive to the new mac, there are a few options how to do it , I used a firewire cable. This makes it easy to copy directly from one mac to the other. Without copying to an external drive and then copying to the internal drive of the new mac.
You can also use rsync to copy between macs the main advantage of rsync over copying is that you only copy what isn't at the destination already and you can stop part way through without having to figure out which files were copied already when you stopped copying.
You can even boot the new mac from the old Mac, OSX isn't tied down to the hardware like windows is.
Some Macs also support target display mode in which case you can use the old imac as a second screen for the new imac.

This may not answer your question directly, but I have no data files on my iMac. Everything I have is on 2 redundant HDD and a cloud backup. When I upgrade to hardware, I backup to the Apple Cloud and restore to the new devices.
