Personally my go to lens is the canon 70-200 ii f/2.8 usm. You could use an extender for outdoor shoots to get extra length but would be at a disadvantage for low light shooting as the extender will double the f stop which would mean you'd be better off with 100-400
I shoot lots of equine events both outdoors and indoor arenas and find this lens to be fast and accurate, make sure you have only one focus point set and a fairly fast shutter and you should be getting sharp images from the feet to the nose
