What Method of metering do you use in your photos? Evaluative, Center Weighted, Partial spot, or Spot?
Do you intentionally set your focus to match your metering? Do you set focus to a single point when spot metering? Zone focus for Center weighted Metering?
You talkin' to me? I set mine on spot, it seems to put special emphasis on the focal point in most modes. I do not think it does anything in "M" mode. That is where I shoot mostly; you know what you are going to get when you do it like that.
"What Method of metering do you use...." I shoot Nikon and use Matrix Metering exclusively... That said I supplement this with Exposure Compensation as each situation predicates... My go to is the Histogram... This is by far the most useful component in the exposure equation...
However for critical commercial work I ALWAYS shoot brackets... no exceptions... Nikon makes this so incredibly easy with auto bracketing in Continuous High Speed Release mode... In less than a second I've typically captured more than enough info to assure that I meet client expectations... However for studio work I use an incident light meter... this assures that I can effectively balance my kickers, hair light, etc to my key light... Setting up studio illumination without an incident light meter is pretty much an exercise in futility
Focus is a far more complex issue... It is virtually impossible to cover this in a Forum post...
If you are are Nikon shooter you might benefit from Nikon Professional Services Technical Solutions for the D500
Other earlier bodies are pretty much the same as far as focusing modes and which custom settings work best for various scenarios...
http://nps.nikonimaging.com/technical_solutions/d500_tips/af/Bottom Line? You seriously need to test and calibrate you kit for your specific needs....
UHH is likely not a substitute for individual testing....
Hope this helps SS319...
I wish you well on your journey...
Usually spot, but evaluative works well in some instances.

It always depends on what you're shooting to what metering method you choose. How you focus is a thing of preference!

Spot 100% of the time. Use the Zone System to assign the correct bias for the tone I am reading. For the majority of cameras, the focus sensor location is what the spot meter reads. I can get correct exposures 100% of the time with spot metering.
