Bad idea. Perhaps she would prefer a D500 since she already has lenses for a crop sensor. I don't think practical jokes are very funny, anyway.

The gift of an 810 should be received in the original box, wrapped, uncharged, and untouched.
That's not a practical joke. It's plain mean
I like to joke around with my Daughter and her Daughter like to joke around with her...
But, I would say don't do what you said your were thinking, that would ruin it for her.
And my Daughter keeps reminding me that she will be in charge of what Rest Home
that she puts me in.....

Reminds me of when I went to the convenience store, bought all the previous nights winning Powerball numbers, and had my Dad go thru a small stack of lottery tickets as he was checking his with the numbers in the morning paper. Mom and I thought it was funny. Dad.....not so much. I later realized how mean that practical joke was. Dad didn't get to excited, he just started putting on his shoes to go run it thru the lottery machine. I quickly told him it was a joke.

It seems it's not the first time either , so from my point of view I don't see anything wrong in that. But it's not for everybody :) .
Like me , I bet you know very well where the limit is and with whom you are able to do a practical joke :) After all , this practical jokes involves nothing physically or hurtful for anyone. Only for the D40 which is hired for job especially to get hurt for the audience :)
As the D7200 surely is a grate value to her at this point, and may have some personal feelings attached to it by now, I would not wait to long to give the D7200 back. Stage the delivery so you can just say: And if you should miss the old one , happy birthday my dear, here's your old one.

Now for the practical joke:
I plan to "borrow " her current Nikon D7200 body with the intent of photographing her, as we stand in a precarious position above a cliff , a waterfall or other similar location.
As she stands watching, I'll make a point to change out a lens on what she assumes is the current D7200, fumbling to the point were she sees me 'accidently' drop her camera body perhaps hundreds of feet down to the ground or into the water. I will of course have changed out the D7200 body with an old non-working D40 i just picked up off of EBay for a few bucks -having safely ensconced the D7200 in my bag.
Oh, the look of sheer horror i expect to see on that beautiful face.
Of course being the dutiful dad I am, I will immediately offer up 'my' brand new D810 and the corresponding lenses as a sacrifice for her loss ( which was really for her anyway). I'm just wondering at what point should I hand back the original D7200 and try not to laugh so hard?

Apparently, she still speaks to you after her lifetime of living with your brand of humor, so I guess this will be a survivable experience. BUT, since there are differences between the cameras and Full Frame and all, perhaps you might re-think the gifting and do it with a softer approach so she can become familiar with the new body. THAT will really surprise her--I'm just guessing!
