you can just hear the vegans out there salivating over this wonderful vegetable.
Those grew in the swamp area near my hometown. We called 'em Cattails.

They look burned to me, no wonder the mustard didn't help.
They are edible, I have eaten them, you need to pick them before the flowers go by, the brown part is the flower that has gone by, pick them when they are green( flowers in bloom) boil them and slather with butter and salt like corn on the cob (spring time only), the base of the stock when you pull up the plant, (you can eat this all summer), it will be the white part can be eaten raw. and in conclusion, the tubers that they grow from is edible very starchy like potato (edible all year long even winter), this is top shelf survival food.
