If you can hike, I would go to the Superstition Mountains. I really like the Peralta Trail:

The trailhead is just southeast of Apache Junction. If you head northeast on 88 from Apache Junction towards Roosevelt Reservoir you will encounter some scenic areas as well.

The popies are still not in full bloom in San Carlos. I was up there today probably a week or two still great today
