My advice, from a distance, would be..."Ask to be excused the job, and leave it to a Professional Photographer", who will have the equipment (Editorial) and the knowledge for working on the day, and afterwards in getting prints out to the customers. This is, but for the name of the event, the same as someone being asked to photograph a friends wedding. And it is the first time you would have tackled such an event. Too many pitfalls for the unwary.
I am a pretty good professional photographer and I would have heart failure if I had to be good enough to produce products sooc. I'd also be out of business. The only professionals I know that sooc are journalistic photographers and forensic photographers. I would love to see some of your work as it might inspire me to do better and save me hours and hours of post production. I can make a good capture shooting JPG, spot on focus, white balance and exposure. I find it necessary to shoot raw, correct my whites and blacks, adjust my horizon or verticals, adjust my camera calibration, adjust my white balance, sharpen and sometimes a little cropping and possibly other adjustments. I feel my job as a professional photographer is to present to my clients as good a representation of the subject as humanly possible and I have to spend time editing in order to do that. If you or your mentor have a web site where we can see how it is done, I would greatly appreciate your sharing it here. I am always open to learn. Good luck.

Your mentor was an idiot. ALL photos are altered. whether it is done by the camera or a PP program. A print is a form of alteration. The only unaltered picture would have to be the size of the sensor. (a "contact" print). Any picture, for that matter, is an alteration of the scene.

Have to disagree with your mentor. Getting good stuff right out of the box is essential, but that does not mean that it does not need a little tweeking. The best photographers in the world manipulate images to some degree, including the Master Ansel Adams.
It's very easy to make a watermark using brushes in Photoshop Elements.
