I would bring the D750, 50mm, and 24-120. And I would get an ultra-wide lens; my preference is the 17-35 f/2.8, since it takes filters and is fast. That is the combo I took to Arizona/Utah a few weeks ago.

As backup, you can bring the D7000 and 18-105. The problem with using DX as backup with FX is the need to cover wide angle with a separate DX lens. Which just adds to the weight. I use a D7100 as backup/alternate with my D750 when shooting sports, and then I don't need to bring DX lenses. But for landscape, you need an UWA DX lens for coverage.

This question is one of the many variations of "what lenses should I take to . . . ."
There is no single good answer except "take only what you need to enjoy the trip."
That said, I am a long-time Nikon user with a big collection of lenses. What I choose for a river cruise is far different than my choices for Jeep trip (with a few short hikes) to the Moab, Utah area. I take a lot in the Jeep but, as time passes, I take fewer (and lighter) items in my day pack.
Here's what worked for me on my last two major outings:

To Europe on a river cruise (with daily land excursions) from Amsterdam to Budapest plus overland to Prague, and
To South America on a land itinerary from Lima to Arequipa to Puno to Cusco to Machu Picchu:

Nikon 7100
Nikkor 18-140mm
Sigma 10-20mm
Nikon P7700 (28-200mm)

Did I occasionally wish for a longer lens? Yes, but not too often.
Did I occasionally wish for a faster lens? I allow the Nikon 7100 to auto range from ISO 100 to ISO 800. That, plus a few stops of Image Stabilization and bracing on something is sufficient for all but the most extreme situations. The Nikon P7700 has an f/2.0 lens and is probably best used at less than ISO 800. Like the AE card, I rarely leave home without it.

I do dream about a 10-200mm f/2 made of something light enough that I can carry it all day. (Did I mention affordable?) I continue to dream but make practical choices based on what I am willing carry for a long walk uphill on a hot day.

Tripod? No, but I do occasionally use a small bag about half filled with dry rice.

I am happy with result of those choices. In the interests of full disclosure I'll reveal that I plan a month-long back-pack trip to Peru, Bolivia, and Chile. For that, I'll be taking a Sony 6000 mirrorless with a 10-18mm Sony and a 16-70mm Zeiss/Sony. Everything will be carried on my back. The heavier, bulkier DSLR stays at home.

We took a Viking cruise from Amsterdam to Budapest last year and it was superlative in every way. 13 days of fabulous scenery, history, and great food and wine. I took extensive Canon equipment, but 95% of my images (2000 total) were made with a Sony RX10. Perfect all in one camera, and you can get one now for $400.

Don't know anything about Nikon gear, but I would take the 18-270. It covers pretty much the entire range of all your other lenses. I would also take the 50 since it should be a fast lens. Good for night scenes, etc. As far as bodies, I assume one is a full frame. I would take that since it should have better high ISO performance over an APS-C body. Helpful for interiors, etc. Plus, it's a good match for the 50. Take as little as possible and enjoy the trip!

Carl thanks so much for your experiences I will take them into account. Any advice for my wife's fear of flying in and out of Paris????

I have taken river cruises and bus tours of Europe. Unless this is a photographic expedition, my suggestion is the less the better. One camera, one lens. I travelled with the 18-270 and was very happy.

I would take the longest reach you have, there are things out in the distance you'll want to capture and I would take something to shoot inside buildings. Lots of batteries and lots of cards... Before then check out my friends paul and Cheryl aboard distant Shores, they cruised the canals in their boat. lots of videos if u look up distant shores.... http://www.distantshores.ca/canals.html
