I have thousands of old B&W prints and negatives that I have scanned at a relatively high resolution. I would say that around 500 are worth detailed restoration, and tho I have done most of the common spot & response curve editing, I need a definitive workflow pproach using LR/PS. Is there a book out there someone can recommend ere I begin trolling through the haystack?

I think your question concerns post-processing, rather than restoring the originals themselves. You may want to post this, along with a sample image or two, here:

Visit
www.retouchpro.com - there are lots of really good tools and techniques for doing what you want.
The book I have is, "Photoshop Restoration & Retouching" by Katrin Eismann", second edition. It was published by New Riders Publishing in 2003, so it's somewhat dated. There are 360 pages that show you how to restore old photos and retouch portraits. Obviously, there are new tools in PS since this was written but it's a good primer. It's no longer being published but you should be able to get a used copy cheap.

Thanks. There's a 3rd edition in print dated 2006--still a long time ago but apparently an unusually clearly-written book. I'm agonna get it.
Yes, thanks, I bought one, described as in "acceptable" condition; I'll be interested to see what that means!
