help 😭problems using an canon fd lense adapted

Some of the adapters have a stop down ring that you twist after you have composed and set aperture. Otherwise it shoots wide open no matter what f\stop you set.

What do you mean "maxed out my ISO?" If anything, you want to reduce the ISO to your lowest setting to reduce the sensitivity, not max it out higher. I'm guessing like everyone else here that the f/stop has to be set manually via the lens. So you can use a hand held light meter to meter your subject, set the shutter speed, ISO in camera and then set the f/stop via the f/stop ring on the lens and then shoot.
