I am a Retired Nurse and can now Pursue my passion in Photography.
Assuming you have some lens from the Nikon 300, consider the following models in order from most expensive and most advance to least;
D800
D7100
D5300
D5200
D3300
D3200
D3100
Anyone of those model cameras will do what you want.
However because of the nature of photographer there maybe no one camera which will be the last one you buy.
As your skills increase and your interest change and newer camera models get created (advancing technology), you may find that you will want to "upgrade."
Which ever camera model you buy, as you jump back into photography, master that model before you go on.
Remember two things;
1. It is not the camera. It is the person behind the camera.
2. The you, the camera body and lens are just one part of photography. There are many, many other accessories.
Welcome to the bottomless expense pit (> $$$$$) of photography (smile).
Enjoy yourself.
Thank you for your input. I am finding that researching cameras and trying to make an informed decision - reminds me much of the medical field I just left and researching concerns about medicine.
