This is from your 2nd photo that was not cropped.
I brightened it up a little, and also did a little dodging across the middle of the mountain/snow because it looks kinda gray almost brownish in some places.
I like the Christmas tree also.
Really neat gift idea.

I lightly adjusted the levels/contrast to eliminate the hazy appearance. I did not crop...to do so would reduce the natural vastness of the image. When it comes to editing, I find sometimes less is more.

Steve, since you said it was OK I tweaked your original in PSE 2. I used the Correct Color Cast tool to whiten the snow (it was a bit blue/gray). I used Levels and slid the light & dark points until they just touched the respective edges of the histogram. As Jerry suggested (and I thought the same thing) I cropped off some of the top so you can't see how high the mountain is (it was looking a little cramped at the top) , let the viewer's imagination set the peak height. This also focused a little more attention on your buddy.
Finally I used Focus Magic plugin set to sharpen +2 at 100% to crisp it up a bit.
Let me know what you think, don't worry I can handle criticism, it is not my photo, I just tweaked it ;-).

very nice picture maybe a little bit more contrast and there is something on picnic that brings out the best colors..i also thinkyou could try it with the top of the mountain cut off a bit..play with it somemore..great gift..thoughtful.

Here is my attempt
I adjusted the levels and curves then added a bit of glow to turn the snow a bit whiter
Sharpened it and added a subtle vignette

Thank you to everyone, I didn't see a bad edit at all, I love the Idea of cutting the mountain off to set the imagination free. I also like the softened look, I think I shall do a bit of all of it and see how it turns out. Thanks again guys and dolls, you all put a smile on my face and set the gears in my brain turning.

You might also want to consider a vertical crop to accentuate the height of the mountain.
On this, a Levels adjustment layer was used to bump up the contrast just a bit, and a gradient filled layer mask (transparent at the bottom, black at the top) to prevent the sky and mountain peak from getting too dark.
Added a little extra sky for balance, and just a touch of sharpening.
