I shoot lots of manual focus lenses on my cameras. That said, it can be a pain since the modern DSLR's focus screens are optimized for AF lenses. On one of my older DSLR's, I switched out the focus screen to an older split image screen ( bought from http://www.focusingscreen.com/) On my newer DSLR's I use a viewfinder magnifier... Practice helps with acquiring proper focus...The old method of anticipating action & pre-focusing helps in some situations too... Depends on your situation. The diopter adjustment on the camera has no influence on your focusing unless you set it wrong What camera are you using ?

I assume you are using an adapter. One of my adapters has the so-called Dandelion chip, originally of Russian origin. I bought it from China, fairly cheap. It can be programmed to a dedicated manual lens to give you auto-confirm in the viewfinder (and the "beep" if so desired). Took some trial and error to adjust for front/back focusing but now it works well enough on my old Olympus 50 1.8, maybe 70% keepers. I only use this on my E-3 as I still need a big, bright viewfinder.
