Why are so many people shooting in black and white lately?

Did I miss something? I don't think the question mentioned "conversion." But then, I am not a digital shooter.

The comments mention "tonality" and "shades of grey" which are correct references. However, being a predominately b&w photographer, I still see tonality (the zone system) as color.

It is interesting, I think it is more difficult to make a really striking color image than b&w. Too often, it is easy to just make a postcard picture.

I agree with you a hundred percent. I bought many a moon ago Kodak's B&W instant cameras as a lark and to experiment to see if I still got it. The answer was no. I got a lot of mixed results, and to say the least the common consensus, I needed to do more practice. Fair enough. Color is so easy and it takes practice to get B&W down to an art form. I loved it and if the finances were better, I would go there again. The fun is in the failures to get to the successes.
