Does anyone know how to memorise a setting for my nikon D7000 so that I can take 3 photos with different exposure to use in HDR?
I would appreciate if you could run through the steps from beginning to end..

In the menu you have a bk setting that's your bracketing mode it will take 3 shots, 1 over exposed, 1 under and one exposed properly.

I think you can somehow put in a memory....U1 or something so don't need to keep going through menu
Yes u1 is user settings just set that as bk and it will hold until you change your mind.

Please refer to Page 109 of your manual.
1. Menu > Custom settings > e (Bracketing/flash) and select e5 then select AE only.
2. Press BKT button (on side of camera)and then turn main command dial to select 3. Then rotate sub-command dial to select the amount of +/- increments.
3. TO STORE THIS INFO. Go to menu > set-up menu > save user settings > choose U1 or U2 and > SAVE SETTINGS.
To use the U setting simply turn dial to whichever U1 or U2 you have chosen.
You can change this setting when using it and this will not permanently change the U setting.

To change the U setting - MENU > SET UP MENU > reset user settings > select U1 or U2 > reset > OK.
The instructions for the first part are on P109 and the instructions for saving onto U1/2 are on page75. Here you will find other options for adjustments.
I think I have made this too simplistic for you but I prefer overkill to underkill. I just hope it helps.

Trudy has outlined the process very well.
I'd like to add that BEFORE you save your settings either U1 or U2, make sure you are in the appropriate exposure mode (e.g. Aperture Priority or Manual, not Shutter Priority. You will want your HDR shots to have the same aperture and vary the shutter speed for consistent DOF.) The D7000 won't let you switch between these modes once you are in U1 or U2 -- it only lets you use whatever mode was saved previously. It's a strange limitation, since you can temporarily override many of the other settings in the User modes, and it will still remember your original saved settings when you return to that User mode later.
