I found it is much like having a phone in the car - too dangerous to pull it out some times.
I have used my camera harness with my bridge camera and kept it on when I have been"road shooting" in the mountains - not knowing what was around the next curve.
I know I will not do that with my DSLR with the 100-300 on it.

Best photo op I ever missed was at Lake Tahoe a couple of summers ago. The wife and I were driving down the road when we saw a young bear walking down the road. I pulled over and went to grab my camera which was in the back of my SUV. Meanwhile the bear was wandering through a construction site and jumped up onto a full dumpster. As I turned to raise my camera he had discovered a McDonalds bag and was holding it in his paws while standing in the dumpster. Just as I was about to take the pic a couple of construction workers yelled at him and scared him away. Last time I saw the bear he was headed up the driveway of a very expensive lake front home. Would have been a great shot had I been able to get it.

this is a roadside photo that took years for me to catch the season, light and traffic co operating.

The second part of this post - where I keep my camera. For many years I kept my bridge camera under my drivers seat where I could reach it in a flash - now I keep my DSLR directly behind the counsel covered with a towel for heat and theft protection.
I too keep mine on the passengers seat with a towel or soft jacket over it. If I want most my gear I have it on my Vivitar backpack on the seat that has a cool designed frontal flap that allows me to easily access the camera without hardly looking. Some of my favorite shots are from behind the wheel of my truck on an old country road. Like this one...........

We always had Red tailed hawks living across the river on the side hill. One day I was planting and weeding on the river plain and heard a hawk's call, looking up I say one hawk flying up out of the trees. The hunter flew in with a squirrel/chipmunk in its talons. Like a pro basketball player it tossed it down to its mate, who "sat back" and snagged it in her talons. I didn't have my camera, but will forever remember the scene. It was extraordinary, had I been fussing with my SLR I probably would have missed it all.
