Try to take the funicular up San Cristobal hill. Beautiful city views, food and souvenir vendors, lovely Marian Sanctuary at the top. Wonderful city with friendly people and good food.

We went thru Santiago on our December trip to the Falklands. We hired a bird photography guide for three days. He took us up into the Andes, the coast and a blind he built in his back yard so we got to see a lot of the surrounding area. The day trip up into the Andes was great in that we got to see the Andean Condor, the largest flying bird in the world. We didn't really tour Santiago. The Falklands are amazing and you will love it there.

Guide was really a good birder and a Sony affiliate for Chile. A really good photographer and, importantly, his English was perfect. They pick you up at your hotel which was convenient. Spent three days in Santiago a couple of years back
1 One trip into the hinterland, Cajon Del Maipo
2. One day trip to the coast, Valparaiso
3. One day in the city, including an organized city tour. If you get the chance go to the Presidential Palace "Palacio De La Moneda". In the square opposite you will find a statue of President Salvador Allende identifying that he died on a well known date in history i.e. 9/11 (but in 1973); the day that the awful General Pinochet took over.

Rent a Car and drive to Valparaiso on the Coats. They have wonderful small fish restaurants ther. You can do it in one day
