I have a 17-35, 28-70, and a 80-200 AS-S Nikon 1:2.8 will they crop on a D850?

I’m not sure what you mean. I take it you mean AF-S not AS-S.When you say crop do you me zoom? If so, yes. As long as they are Nikon F-Mount lenses. ED means Extra low Dispersion and does not affect the way the lens functions.

All the lenses are FX lenses so they should work fine on your D850. No cropping.

They are fine on the D850, they are FX not DX.

I use those lenses plus a 35-70mm f/2.8 D with my D100, D200, D300 also on my F4 & F5. They are my Trinity plus 1. They are FX and as they are known to be Full Frame, lenses.

They work as the best of their day for professionals on FX cameras and even better on DX cameras because DX cameras only use the center of the glass which is the best part.

First, D850 is a great camera. I consider it the flagship even considering the Z9. Studying only the 17-35, it is a FX lens. The D850 is a full frame camera and has no problems with FX or DX.
Your question regarding "will they crop" opens a new box. You can switch an FX lens on the D850 to DX mode (c-crop). People will argue you have increased the zoom from 100 to 150. This is actually not true. It appears that way, but all you done in narrowed your view. Additionally, you have given up about half of your pixel count. I am getting a lot of these questions as everyone is preparing for the solar eclipse.

I recently acquired a lightly used D850 to replace an extremely well used D750. All my old lenses work fine and many of them are ED lenses. BTW, I also bought a lightly used D750 to have as a backup and it's interesting. I loved using the D750 for 10 years but now that I have the D850 I never touch the D750. The D850 is that much better. Best DSLR ever made and depending on what you're shooting, might be the best full frame camera period and lightly used ones can be bought for a fraction of what the new price was a few years ago. Love it.

…and cropping the D850 is pretty much the pixel density of a D500

I gave my D850 to my son-in-law,
when I got my Z9.

He is an excellent BIG ‘tog.

(Probably should have sold it!!)
