I am headed to Norway, the Lofton Islands, this February. I am looking for suggestions on cold and wet weather gloves for myself. I purchased silk glove liners. I had thought about Mittens that flip over and expose two touch sensitive finger gloves for myself. I am open to suggestions. I opted for a jacket which makes me look like a box ,but is waterproof and has lots of pockets and isn't too long as to inhibit my arm movements. Trying not to be vain but just sensible. I live in Florida so I doubt I will need this type of gear again. I do plan on purchasing hand and foot warmers, enough for 8-10 days.

Check on B and H. I bought a nice pair of gloves with controllable open fingertips. Wear inside of mittens if really cold and only take off mittens when actually shooting. Have fun!
Look up The Heat Company gloves at B&H. I live in Maine and gloves for photography are critical. I own a pair and I swear by them. You can put hand warmers into them so when you have to take your hands out of the gloves you put them back into nice cozy warm gloves.
The wool mitten/gloves I bought several years ago have the flap over fingers + one over thumb. Found in sporting goods section (for hunters). Even Walmart offers a few.
My two favorite things are photography and kayaking and I’ve never been able to find a cold-weather glove for either that I like.
I have tried various types of gloves including those that can pull back exposing the fingers for operating a camera. I have cold-sensitive fingers due to previous outdoor activities and have settled on a thin pair of silk liners with oversized mittens that I can stuff with heat pads.
I bought a heavy pair of mittens from LL Beam years ago, put a latex on my right hand to keep it dry.

I was there in February. A mitten with a flip top worked best for me. I found that I could wiggle my index finger out without flipping the top and exposing all the fingers. From Lofoton I traveled to Lapland and was out some mornings in -24f. The most important element of your protective gear are the chemical heat packs that you can stuff in your mittens and in your coat pockets.

Try a pair of shooter's mittens. They can be lined and are much better than any gloves I have found made for photographers. Could never find any of those that were lined.

No need to knit your own. Sporting goods stores sell mittens for hunters. The top of the mitten opens up so you can use your finger tips. Then close the flap on the mitten to keep them warm.
