It depends on how you have your camera set up. If you are capturing with reduced resolution or greater compression, files are smaller, so the camera's buffer is deeper. And the buffer saves to the cards faster. So there's not necessarily just one answer.

I am shooting lossless RAW, so not reduced resolution or compressed. The files are full size. But would agree, if you shoot smaller JPG, the buffer is going to hold more pics. But when shooting RAW files (as I stated), I had no problem shooting for several seconds, 10 fps. As shown in the accompanying article, one can shoot for 20 sec at 10 fps lossless RAW with the D500:

So the question to me, is what is the problem that the OP is having? Are they trying to shoot longer than 20 sec? If not, maybe the card is not the problem.

Thank you all for your responses. To clarify, the slow down occurs after a first burst of about 5-10 frames. I stop, wait perhaps 10 seconds and on this next series after just a few frames it comes to a crawl. If I wait perhaps 30 seconds I can start up again and get 5-10 frames without issue. A response from ricardo00 asked about writing to a second slower SD card. I do also write to a fast SD card at the same time - I should have considered this - perhaps simply removing that card would help.

If you are writing to two cards you have to wait until the slower is written to. Perhaps the camera writes at that speed even if the second card is inactive.

Are you writing raw files to both cards? That would definitely put a hard block on the speed of the process. I write Fine/Large JPEGs to my second card. There is no slowdown as the one
you describe.

On a separate issue, what and how are you photographing? Long shutter times will definitely slow the entire process as well.

I take mostly BIF and write both as RAW and Fine jpeg - perhaps this is too much to expect and I will be better removing the SD card or loosening the jpeg quality.

Got it. I believe it's well worth doing a test with a lower-tier JPEG setting (depending on what you do with them). At the least it should be easy to see if that's the problem. You could also set both images to go to your XQD card and use the SD card just for overflow. That might not have as much benefit, but it's worth a try and costs nothing.

How many shots are yoy taking? I shoot 10 often and have never hit the buffer.

Oops saw already the same suggestion above, put the second card as over flow and not backup. Or remove it and see if your problems are solved.

One question we should have asked earlier...when your camera is slowed down, is the green "Busy light" illuminated? I think we probably all presumed that it was, but could you verify for sure? I'm especially interested in knowing about this when the camera starts up slowly after some time has passed.
