French Macarons, Challenging and satisfying these small partly chewey-tender-melt in your-mouth filled meringue cookies with a filling border of buttercream frosting that retains the tasty strawberry or pineapple curd inside until you sink your teeth into it, chocolate ganache with a hit of cayenne pepper makes a tasty filling too.

Perennial favorites on the Great British Baking Show usually as decorations on a larger construction. My wife occasionally makes them and they're tricky to bake but absolutely delicious. The only problem is that it's far too easy to rationalize that "they're small so I can eat just one or two more."

You made that?

Looks fantastic...like the cayenne addition..one of my go to spices for almost everything...especially good on ice cream.

Thank you, Yes I made these, I made a large batch for my great-granddaughter's birthday party. I use cayenne on lots of things and with cinnamon on oatmeal anything sweet like toast with jelly and pretty much anything with chocolate.

Yes, I agree BUT even when I make larger sizes I will eat more than one. "Hint" goodies eaten in the dark or off someone else's plate have no calories. Enjoy

I make them with a chocolate ganache and they're great, but piping and baking the meringue shells is an art form of its own. Adding a little pureed prune to the chocolate ganache ramps the flavor up even more.

I know prunes and chocolate is a wonderful taste marriage...

But that's a combination...that could prove troublesome.

Eat those at home.

Ha Ha Ha I like all dried fruits and would have no problem with it, But macerated prunes would be very runny and I think in a soft Ganache it would all squish out in your hand at first bite.

I remember when starting out they are very tricky getting the proper "macronage" which is the ultimate batter viscosity to make the perfect Macarons.

You don't need to add a lot of prune to ramp up the flavor, maybe 1/2 prune in an entire batch ganache (2-3 cups) so the side effects are minimal and its effect on the ganache texture is minimal, too.

Thanks I will try it, prunes don't bother me, I eat them for a snack.

You know the old say: prunes are the cure for the common cold. They don't do anything for your symptoms, but you don't dare sneeze!
