I live in Las Vegas, NV and am interested in creating VR 360/180 videos that would work in headsets like Oculus and such. Any help would be appreciated.

Take a look at the Ricoh Theta cameras. They do 360 VR stills and videos. I have an older one and it works pretty well, although the resolution isn't awesome. They make a new 51 megapixel model that solves that but I don't have unlimited funds or time to play with it.
Another very interesting thing is a new lens from Canon, the RF5.2mm F2.8 L Dual Fisheye Lens (
https://www.usa.canon.com/internet/portal/us/home/products/details/lenses/ef/vr/rf5-2mm-f2-8-l-dual-fisheye-lens). It does exactly what you are looking to try. I suggest maybe renting the equipment to see if you like it.
