My inner Geography teacher just has to come out for this. It refers to the type of bedrock* where the stream originates (usually as springs) and flows.
260 verified "chalk streams" in the whole world and 224 are in England (in fact Southern England) and a few in France. Chalk being porous the water is filtered through the bedrock and the streams have very little organics ect. and thus extremely clear water. They have very little runoff water so the water level/flow also doesn't go up and down with the seasons like other streams often do. They also have almost no mud on the bottom, stones and gravel with a little sand in between and this makes them prime breeding streams for fish as well as beautiful like the OP's really good image.
*The "White Cliffs of Dover" are chalk rock.
