A new store opened up locally. I saw the big sign out front: "Seasoned Evolution Center." Anyone want to guess what kind of store that is? I have an pretty good idea.

I looked it up and the function found doesn’t appear to be associated with the name. Can’t help wondering what the association might be.

I googled Seasoned Evolution Center and BIPOC (term contained in the description) conclusion, they will help everyone EXCEPT White Males! TO me that's prejudice!

If I had my druthers, it would be ' Seasoned = (dry rub) Evolution= (changes that's takes place from Barbecue heat) and Center = Where to place the Brisket on the rack!!!

If this is the same one, it sounds like a fantastic idea - allowing startup businesses, especially small-scale food businesses, to get started without the overhead of rental space and processing/baking/packaging equipment. It is too bad that they racially discriminate. Many potential entrepreneurs of many backgrounds are not "privileged" and could benefit from this. It is ashamed that they do not simply make access to this a function of lack of access to financial support.

The website describes it:

The Evolution Center affords the historically privileged incubator experience to the communities who have been excluded from such opportunities. At the Seasoned Evolution Center, BIPOC and women entrepreneurs come together to formalize and grow their business, gain financial literacy and entrepreneurial skills. Their success will create lasting change.

Infrastructure of the Seasoned Evolution Center includes:

- Commercial community kitchen, with the capacity for five entrepreneurs to operate simultaneously

- Dedicated co-packing facility including three kettles ranging from 55 gallons to 80 gallons

- Dedicated baking area with an oven that can simultaneously produce up to 10,000 cookies or 200 loaves of bread

- Co-working space with wifi and printers

- Meeting space

- Event space

- Networking area

- BIPOC & Women Focused Grocery

- Expert resources and seasoned mentoring

And the answer is ...

It's a restaurant. At least I think it's a restaurant because it's in the building where there were two other restaurants.

Here's another mystery sign. A new business moved into an empty building near me. The sign out front says "Spector." They paid good money to have that sign made, but it doesn't convey much information.

Spector makes guitars.

Maybe they sell old movies like Planet of the Apes, and old books like Charles Darwin's "On the Origin of Species".

First - Spector can be the name for any company and I can't picture a guitar company opening a stand alone store in this business environment.

Second - The descriptions I've seen don't appear to rule out restaurants. You might be in for some good Soul Food.
