I believe it will trigger the flash, but ETTL and zoom functions do not work, but I admit up-front, that I haven’t tried it.

Most adapters for flash leave you with only manual functions, but the flash will fire.

I was able to get a Nikon SB800 to work on a Fuji XT-1, but if you’re unable to get your SB600 to work you might want to consider one of the inexpensive, but very good, Godox speed lights. The Godox 350 (F) would fit your Fuji nicely, and it’s relatively inexpensive.

The SB600 only has i-TTL and manual. Of course i-TTL won't work with the Fuji so you only have manual. Unlike the SB800 which you can use in A mode which works quite well.
