My Dad grew up in the depression. His sandwiches were made from home made bread. Most of his school mates sandwiches were made from store bought bread. It made him feel out of place. When he grew up he realized that he was the one who had the better bread.

For a lot of people it was just plain having any bread.

Or having a good sharp bread knife to slice your own.

But being from Kentucky I will nominate fresh country biscuits and fresh homemade cornbread - in fact I put them both up as being better than sliced bread.

Oooohh, that is good eating. My mom had three recipes for cornbread. One a little dry meant for putting in soup or beans. One the was meant for eating with foods, moist and tasty. Then she had one she called sweet cornbread. She fixed it with some meals that were special and always made "extra". It never lasted long. It was as good as any cake you ever ate and didn't need icing. Just to throw in an extra, her cakes were something that people would come to visit for.

My Grandmother made cornbread with fairly course ground meal so it had texture. She also made it in a large cast iron skillet with "Bacon Drippings" and some coarse ground meal sprinkled in before she poured in the batter and left it in the oven a bit longer so it browned. Then sliced it like a pie. This pale, square, cake like stuff without the texture and the large grains on the outside isn't really cornbread to me. But it is sure better than no corn bread.

Looked it up, sounds good.

I forgot to say that my Grandmother always popped the hot cornbread out of the skillet onto a platter so the dark brown side was up before she sliced it.

Robert; My wife is from Pound, Virginia in Southeastern Virginia. Quite close to Kentucky. She makes cornbread exactly as you describe. She has to buy her corn meal from back east as none of the meal we get here in Oregon is acceptable as its too sweet and nothing like she grew up with. We eat it with either snap beans or soup beans.

Never had good cornbread until I married her!!

I make my own bread all the time. BTW, sliced bread was only invented in the early '30s. It really meant something to be better than sliced bread. I can slice a perfect piece, but my wife, not so much.
