Can Nikon D850 be set in camera to take B&W photographs only?
You can set it to take only JPEGs in B&W. Page 175 of your D750 manual covers Picture Style. Page 83 covers image recording options.

Most any digital camera can be set to take images in B&W.
I have a Pentax Q that I use for only getting B&W images, as it does such a great job of doing it.
Here are a couple of examples of what it is capable of. These are B&W out of the camera with a little PP.

In your manual, go to page 279, go down to third subject, monochrome, under this you will see, black and white. It is in the retouch menu (creating retouched copies), you shoot in color first, then in the retouch menu you can copy your photo's in B&W, Sepia, or Cyanotype.
