Tough question. Simple answer:
Go into a good local camera store and pose the question to a knowledgable sales person.
Having traveled to Israel many times, my choice for a novice photographer would be a digital bridge camera which is convenient to carry, has no lenses to change, is weatherproof, easy to use, with great image quality.
My choice, based on what I have used for travel:
Panasonic Lumix Fz-1000
Sony RX100.
Put in AUTO mode and let the camera do all the work. You just focus and push the shutter.
If on the other hand you are interested in photography, that’s a bit of a more challenging question....

You have to be kidding. There are so many cameras to choose from that unless you know what is exactly what you need for your trip it is impossible for anyone to make a guess.
Having been to Israel many times here is my $.02. There is so much to see the last thing you want to deal,with is a load of camera equipment. Also, you’ll be doing a lot of walking and probably some climbing so too much equipment is a hindrance. And, if you’re going to be in the desert changing lenses can be a challenge. I suggest either a Sony RX100 series or a Panasonic LX 100. The Sony RX10 series is also a good choice. It’s a bit bigger but will give you everything you could possibly need. Last..and I know this is sacrilege to some, but a good cell phone camera can come in really handy at times as well. It’s a wonderful place to tour. Lots to see and do. Keep your schlepping light and simple!

All cameras have an "Auto" function that in essence make them point and shoot.
As a novice, sightseeing any modern digital camera will do the job. So lets narrow the search:
1 Do you want an all in one or a camera with interchangeable lens?
2 Is your budget for everything
a > $2,000
b > $1,000
c < $1,000
d < $500.00
e < $300.00
f < $200.00
3 Do you want to use your camera for hobby use after the trip?
4 How do you feel about the pictures taken with your cell phone?
5 Do you want big and bulky or small and easy to handle
Answering these basic questions will help the forum help you.

Welcome to the forum, Sumray! You mentioned "cameras" plural. One will be enough, and use the cell phone as back-up. A Canon T7 comes with a zoom lens for around $400 at Best Buy and would be excellent for the sights you will see. Let us know any questions you have. It is also an excellent system to grow with.
Invariably, someone will ask you to take a picture for them.
Carry a cheap memory card with you.
Agree to take their picture, and as you turn, swap out their card for yours.
Take the picture....everyone smiles.
You walk away with their pictures.
There's a good chance they are a better shooter than you....easy peasy.

I have the 70D and it does a great job.
It is a hard question to answer precisely. All modern cameras take rather good pictures. Some sugestions are.
1. Point and shoot style - Olympus TG-6 a rugged and waterproof camera.
2. A bridge camera - no specific recommendation.
3. micro 4/3 - Olympus OMD or PenF offers interchangeable lenses. Camera is high quality and light weight.
4. Entry level DSLR - Nikon 3xxx or 5xxx camera. Cannon might be OK too

Honestly your best bet is your cell phone. It is the easiest to operate, always with you and you already own it. It could be very frustrating taking a new camera with you on a trip of a life time and not knowing how to get good results from it. As far as taking good pictures, unfortunately that is all up to you. There is no camera made today that takes “good pictures”. The photographer takes the picture. Please do not interpret this as me being sarcastic or snarky. What makes a picture good or bad is some understanding of basic photography. I suggest you spend some time either reading or watching videos about how to take pictures with your cell phone. Also do a little reading on exposure light and composition. There are tons of free resources online to help you with taking good pictures with your cell phone. With just a little practice before you go you will be able to get some pretty amazing images with your cell phone. Just search “taking better pictures with your cell phone”. Good luck and have a great trip. Please share some of the pictures when you return.

Well said! All of the “Pros” on here need to remember novices don’t always know what they don’t know and it is hard to ask the right questions.

Go to a camera store and buy a camera. Talk to the expert. Let them steer you into a camera that will fit your needs. What you've asked here is not realistic because you've not provided enough information.
