You will receive some excellent advice on which lens to take, but please ignore the political and controversial statements that will come along. Unfortunately, there are certain members on here who cannot avoid making these sort of remarks.

I have been in Israel many times, always used my Fuji X-E1, then X-E2 and now the X-T20, always with the 18-55 mm 2.8~4 and never needed a flash.
My advice is rent a light weight mirrorless like Fuji or Sony with a Zoom lens like I mentioned and ENJOY!!

My wife and I traveled to Israel two years ago. We were allowed to bring one suitcase each and a carry on bag. We’re not spring chickens either, and knew that out trip would encompass a lot of walking and climbing stairs, especially in Jerusalem. I used a Fuji X-T2 at the time, so I only took my Fuji XF16-55 f2.8 lens for everything. That lens took photos from a sunny day on the Sea of Galilee to underground photos under the Temple Mount. I had more Fuji lenses I had to leave at home, just because of the weight restrictions. Plus, at least for us, we were pretty much constantly walking, and it would have inconvenienced the others on our trip if I wanted to change lenses all the time. Have a great time. You’re going to love it.

I was in Israel, Jordan and Egypt a year ago. I used my Fuji X-T2 and 18-135 f/3.5-5.6 lens and got all the pictures I wanted. The OP did ask which Canon lenses to use, but your advice about not shlepping around a heavy, bulky bunch of photo equipment is advice I would share, except maybe rent a Fuji X-T3 and the all-around 18-135 lens.

I shoot Nikon, but I love travel photography and think that my experience might be helpful. I think that you will get most of your photos with the 24-105. Travel photography needs to be quick, and the days of walking are long. You want to have fun and not be a burden to your travel companions. If you need something longer than the 105, just crop. You can always talk about the "one that got away." In my travels, I keep my 24-70 f/2.8 on my D750 and I carry my 70-300, but rarely get it out. I have a 70-200 f/2.8, but I don't travel with it, because it is so big. Make your choice, don't second-guess yourself, and have a great trip. Wish I were going with you.
I agree on only taking the first two lenses and also adding a light tripod. I was there last year and found a Nikon 28-300 worked fine. Have fun. I had no worries whatsoever about security but didn’t go to Gaza but did go to many parts of the West Bank. Unbelievable experience.

I have been there and am a Canon user. For Jerusalem, even the 70-200 is too long in the streets. For your trip as a whole, you should be fine with the 24-105 and 70-200. I can't envision the necessity of the 100-400.
We have traveled to Israel / Holy Land twice. Last time, took a D300S with 17-55mm f/2.8. So I didn't take a long lens and can't say I particulary missed it. Need fast lens because a lot of photo ops are indoors.
There are a lot of interesting things and people to photograph! I predict you will enjoy the trip!

If you are concerned about being at f/4 indoors, you might get a used 35mm prime at yout price point. You can put one in your pocket (just have a plan for the 24-105 when the 35 is in your pocket).

How about being more explicit about where you are going.
A few yrs ago we went. I have D7000 NO FLASH INSIDE, used only ONE lens 18-140 DX VR f 3.5 - 5.6 , Lots of cards, CONSTANTLY change ISO indoors, Lean on everything possible inside to be steady, VERY Near 0 bad PICS, Many times YOU will Not have time to change LENS, many days I would take 500 to 600 + Pics or more, Military every where young men and women with high powered rifles, Stay with the group and Do not make eye contact with venders on streets and keep on walking, Wallets in front pockets, No more than 2 credit cards and call them to let them know when you are leaving and coming back and where you are going. You will enjoy !!! Bless you !!!

I’ve never understood this type of question. Have you not used these lenses before? Do you think they will perform differently in another place? I believe the laws of physics are the same there. I must be missing something.
