This simple soup is incredible, the flavor and the smell is wonderful and unforgettable. Enjoy,,, sometimes I have a bowl for a meal and then more for desert.
Cabbage and Beef Soup
Prep: 10 min. Cook: 70 min.
Makes
12 servings (3 quarts)
Ingredients
1 pound lean ground beef (90% lean)
2 t salt to taste
2 t garlic minced
1 t pepper
2 celery ribs, chopped
2 cans (16 ounces) kidney beans, or black beans rinsed and drained
1/2 medium head cabbage, chopped or 1 package of shredded cabbage with carrots
1 can (28 ounces) diced tomatoes, undrained
3-1/2 c water
2 T wosheshrire sauce
2 bay leaf
4 t beef bouillon granules
Minced fresh parsley
Directions
- In a Dutch oven, cook beef over medium heat until no longer pink; drain. Stir in the remaining ingredients except parsley.
- Bring to a boil. Reduce heat; cover and simmer for 1 hour. Garnish with parsley.
If Cooking for Two: Soup can be frozen in serving-size portions to enjoy months later.
