Thanks to all - It's SO FUN see what other people do with food - It gives me Great Ideas!
~ So, The steak itself was kept in the fridge - Seaweed Salt and fresh cracked Black Tellichery pepper were liberally put on and then back in the fridge.
Sous Vide is something I'm quite taken with lately - but
DID NOT do with this particular steak!
~ Right before I was ready to cook the steak, I shelled and de-veined the prawns, put them in a low temp pan with butter, and....
wait for it....
a bit of Taco Sauce (medium temp - just a bit.0.spice!)!! Outrageously Good!! Wow!! Those were pulled off the heat quickly as they turned opaque fast and I don't want rubbery shrimp!
~ Now, back to the steak - I prepped a bit of Dejon Mustard with a little Lea & Perrin's Worcestershire and spread it very thinly on the steak on both sides. In the meantime, my little gas Grill is getting up to high Temp as I'm prepping the steak.
~ Once that steak hits the Grill it's flipped only once... I get
one chance for an image and.....

Beautiful result! Why did you skip the sous vide?

The Wife and our kids crazy! I'll come up with something really good - but have no recipe or way to duplicate it... a one-shot deal, many times!! Ha!!

Sounds like you had fun doing that! I like your style of cooking. I do the same thing. Great pictures!
