There are many waterfalls in the Columbia Gorge between Troutdale and Cascade Locks, most notably 620 foot tall Multnomah Falls.

A lot of waterfalls on the coast too. A nice one a little off Hwy 101 near Lincoln City is Drift Creek Falls.

Do your homework online or call visitor centers. Heed the suggestion about reservations and falls and parks along the way and the coast. You can go online and make reservations NOW. Most RV spots are already reserved. Reservations open 6 months in advance. Yes there are a few campgrounds that still have First come first served. But don't plan on finding an open site. Tent camping will have more sites open. Even along the coast, those sites get reserved fast. Don't forget Crater Lake. With the exception of bike-walk in camping it is pretty much reservation only. Columbia River waterfalls can be hit in one day if you only want to see a few falls. But to be more leisurely, plan on two days. You definitely want to travel north to south on the coast. All your pull offs are on the west side of the highway. If you have a big RV, that includes towed trailers. Heed the signs about no RV turn arounds at the pull offs. On making campsite reservations. Make sure that you RV will fit. Most site size does NOT include the towing vehicle. Plan,plan, and have Plan B and Plan C. Enjoy your visit to my state

You're going to a very beautiful area and one of my favorites. You'll never be able to photograph all the waterfalls there but you should come back with some terrific shots and not just of waterfalls. There is one place towards the top where the water comes together to make several waterfalls. Sorry I can't give you a better location but maybe you can google it. You'll need to pace yourself because it is a lot of up hill climbing. Yes there are many trails and they are all steep. Take extra batteries and memory cards and don't forget the water.

Nimbushopper mentioned Multnomah Falls. This is the most popular falls in the area. Get there VERY early in the morning as it will be difficult to find a parking space during the day.
Orphoto mentioned Silverfalls State Park. This park is well worth a visit but I would go there mid week as it is crowded on the weekends. If you're camping make reservations as soon as you decide on your dates.

As for the Oregon Coast, Bandon is my favorite place but it is quite a bit south. There are lots of campgrounds and lighthouses along the coast.

This book is a great resource and well worth the cost in my opinion.

Vaughan's book is absolutely brilliant; but even some of his ratings of waterfalls (specifically distance & access etc) are not always accurate in terms of difficulty. OP needs to id which ones are on his list

Water Falls in the gorge is outstanding. Along with them is how the land changes as you drive East up #I 84. Take an hour and drive up to The Dalles, OR. I believe the drive from Troutdale, OR to The Dalles, OR, is Best road in the USA to view how the land changes. Plus how the ancient Montana Lake cut a path creating the Columbia river basin.

I believe you will need parking permit, however, check it out before arriving.

If water falls is your main goal, then Silver Creek falls is a must. However, the location is kinda out of the way for starting your Oregon Beach drive. Well, unless you want to by pass. Astoria, Canon Beach and arrive in Newport.
{ if you do start in Astoria, I recommend a day at least to cover the sites. I would recommend driving over the bridge to Ilwaco, WA for Cape Disappointment. The lighthouse, the fishing boats, fort, and the list goes on & on. }

If RVing, I can not help you with RV camping in the gorge area. But along the Oregon coast, you can just pull off the Hwy #101 in a wide spot and spend the night. Like the overlook before Neskowin and after Ortown. The Beverly Beach area has some nice wide pull outs for overnight.

In my opinion, the drive from Newport South, is the area I would spend most of your time. Florence & the sand dunes, Coos Bay & Sunset Beach, Bandon is almost a day alone. Then almost every pull out to view the rocks in the surf as you drive towards Gold Beach. Remember each city has it's own unique style and look.

That has not been my experience. I see signs saying "No Overnight Camping" or similar. Perhaps law enforcement officers ignore that?

Yes, I have not RV camped down on the coast for a number of years. So, I do remember now that the last time we drove past Beverly beach area there were homeless camps.

We did 6 days and 65 named waterfalls in May several years back hiking about 65 miles. If you are into waterfalls, consider Silver Falls State Park in Oregon also. Great for waterfalls.

Larch Mountain is a view point just east of Corbett on the Oregon side. It is one of the most spectacular views anywhere. On a clear day you can see the entire Cascade Range and the Columbia Gorge below. Small hike with steps the last hundred yards but not difficult. My pregnant wife did it. Look it up on a map app. I grew up there and hiked all of the trails that start there. Sherrard Point is the actual name of the view point but it is part of Larch Mountain corridor on E Larch Mountain Road.
