There is little that Epson can do about ink drying in an unused printer. But their suggestion is the right approach. You could print almost anything but you want to be sure all of the colors get used.
I have an P900 and an 10 year old R2880 that I use occasionally. I use the unclog program in Qimage Ultimate to print a half page pattern (just a little ink) on plain 8-1/2x11 weekly on a schedule. Both are superb printers and I have never had a clogging problem.
