Don’t think the Gorge is ever more than about 400’ deep. But, pretty impressive just the same.

I have spent a lifetime, 60 plus years, in Oregon.
There is far too much to see through the Gorge and along the coast to answer your questions.
The photographic opportunities are endless.
Every season brings it's rewards. There is no best season.
Spend a few years hiking the Gorge and a few years hiking the coast and there will still be more to see. Not to mention the rest of Oregon and the entire West coast.
Your best option might be to sign up for some guided tours

Don't expect the fall colors you see where you live. We don't have the right trees here. If can catch our fall color it is very nice but not as colorful as you might be hoping for, and you can get great shots with fallen leaves in the creeks and rivers below the waterfalls, but as someone else said, "it's hit or miss" and some years just a total miss. As for the coast, Canon Beach and nearby Ecola Park is very worthwhile, but spend enough time at Canon Beach's Haystack Rock to get a low tide so you can walk out to see starfish, etc. Our ocean is very cold, even in summer -- don't even think it's like the Gulf of Mexico which get 30 degrees warmer than our ocean. Toe-dipping could numb you.

I went beginning of September in 2019 and drove from Portland thru Hood River to goto Goldedale,WA. Hood Rver has a history museum of the gorge. Beautiful views from out looks. Farther East of Hood River in late summer looks more dessert. Go to Goldendale,Golden Dale, and get pictures of Mt.Adams.

You asked about time of year to visit. Keep in mind that late fall, winter, and spring, that snow depth is a definite consideration. Think road closures. This website may help you, a lot!

The Cascades get quite a bit of snow/rain, so you may consider taking your trip during the earlier summer months, and before the late summer fire season. Of course, for a reason that is also the 'tourist season'...
Lots to see and do in Oregon! At a minimum, you may want at least 3 days for the coast, alone!

Multnoma Falls and Vista House are two classic images from the Gorge. Beware that parking is difficult at Multnoma Falls, and the park service has instituted an on-line (but free) reservation/ticket system for Multnoma. I believe it is seasonal, so it may not be in place now.
Latourell Falls is my favorite after Multnoma and you can visit multiple falls in a nice afternoon. All are easy walks. Cascade Locks is on your route and supposed to have a nice tour too.

There was a massive fire there a couple years ago on the Oregon side and Multnomah falls east.
