Day trips: Monterey aquarium and cannery row, Santa Cruz beach and Highway 1 up the coast from there to San Francisco, Wineries both north and south of San Jose, Santa Cruz mountains including the towns of Los Gatos and Saratoga and Big Basin Redwoods State Park. In San Jose (metro area): the Winchester Mystery House, Great America Theme/amusement Park, the Tech Museum of Innovation. There's several museums including both art and history museums.

A short drive from San Jose, there is a RV park in Moss Landing (reservations definitely recommended) and then you can go out on a whale watching boat right next door.
https://www.mosslandingrvpark.com/ And stop in Big Basin Redwood park on the way to Moss Landing to enjoy a walk in the redwoods and ride the steam train.
