Nice picture and Eggplants! Looks like a job for Caponata or Ratatouille - tastiest, IMO, is a mashup of the two Capo-Ratto.

That is a great image and it is making me hungry. Those are so much better lookin than The grocery store ones. I can't wait for my farmer's market. I see an eggplant and tomato gratin!
