I tutor kids in the morning via Zoom.
I've tried to take photos of them when they are on Zoom for the school yearbook, but the images come out too blurry and/or grainy.
Would appreciate some advice.

You are trying to photograph an image that is being rasterized. In other words, there is an electron racing across the screen "painting" the image. Add to that the the image itself is moving. The best you will be able to do is to shoot a photo at an extremely high shutter speed, or to figure out all the math. You might find

Or use the Snip & Sketch tool. Lets you crop to what you want (whole screen or less). Should be more than good enough quality for your use.
Prt Sc - Print Screen. I've done it often, and it works fine. Easier on a PC than a Mac.
Zoom has a recording feature. The Host has it and can turn it on so that a participants can do it. The result is an MP4 video file saved to your computer. There is a wide variety of tools that make it easy to capture single frames out of video into a JPEG. One very good, and free, one is the VLC media player.
Depending on the students, you could assign a project of reviewing and capturing images out of the videos for the yearbook.
The PrtSc method works very well, but stores the capture on the temporary "clipboard". Be sure to "paste" into something before doing much else.

I just found out about this neat feature (snipping tool) earlier this month. To enable is a little trickier than it should be but once it is enabled it is a dream way to capture the screen and crop what you want.

I do the snipping after I copy the screen.
