OK since a bunch have put in what they are eating.
Tuesday night, at the wife's request, I made a big double size crock pot of Chili Con Carne with low fat Angus Beef and let it simmer on low all night. If I tried to use a "substitute" I might be getting a rest in ICU or at least living in a popup tent in the back yard.
A bowl of chili two meals a day and four of us it is almost gone. Now that the cool weather is here I will probably be making 3-4 batches a month. And maybe some stew or a roast (pork or beef) with potatoes and vegetables. Add in a large batch of chocolate chip cookies every other week. Some country biscuits and corn bread plus maybe a pot of BBQ/Baked Beans and I will be doing a fair amount of the cooking.
That is OK, the wife has foot and leg problems plus trouble with her wrists and thumbs from 3 decades on her feet and a lot of lifting of patients etc. in the OR. So she can use the rest, she usually won't admit she can't do all the stuff she used to and over does it at times.

I think I mentioned this sometime ago but being in the wildlife conservation Arena it is known that wildlife and cattle ranching can co exist but agriculture and wildlife not very well. So one for beef
