Shooting while driving...

The picture I'm including here is shot at 75 mph with my left hand on the wheel and in my right hand is a 5D with an extended battery base and a Tokina 100mm macro lens. It takes some practice but, with everything completely manual and a preset focus, it's achievable.

Looks flat enough for you to run off the road and not do much damage. It seems you are more impressed with your ability to be an absolute nutter behind the wheel than your ability as a photographer. Any 5 year old with a Walmart phone could have taken the shot.

Maybe do it with an Uber. Kinda scary. I can picture you coming at me in the wrong lane with a smile and not even seeing me.

Excuse me Richard, but the guy deserves every negative comment he received. Nothing wrong with the human race, except for the guy who made the photograph.
