whenever I need a laptop for photo processing I go to my local computer store (not a big box store) and explain what I'm looking for. They will ask a few questions (no, I'm not a gamer) and will recommend a number of laptops that will meet my needs. I've bought two laptops this way and they've never steered me wrong.
I would say if you are buying one, pick one that uses the same OS as your desktop computer. Otherwise you'll go CRAZY in short order.
I have an android tablet, laptop, and desktop computer. I would find the android tablet very frustrating to use. The Android file management system is terrible. I prefer to use a desktop for editing but it can be done on a laptop. Colors can change with viewing angle however. A laptop can be used with a second monitor.
BTW Olympus Workspace works quite well and you can apply all the art filters in post if you would like. Workspace is free.
I bought an XPS 15 fully loaded for about 3k I think. Also an iPad pro 12.9. Gots a Dell Desktop with a Nvidia RTX 2080 video card and 64 Gb system Ram, fully loaded. I didn't know what exactly I needed so I got everything maxed. In any case, future proofed is my recommendation. But nobody here listens to me anyways.
My wife surprised me 2 weeks ago with a MacBook Pro 16...one of those things I would definatly never have gotten for myself! Stupendous screen, really sharp and well defined. The only problem is I'm a lifelong PC guy and the new operating system is driving me a little nuts as I adapt. Runs Lightroom well and I can reocmmend it highly, at least compared to my 5 yr old Toshiba laptop.

Hey tuftrack, since you are shooting with the 2 camera systems which give you a variety of color gamuts to choose from, including truest color, you probably will be happiest with an Apple product, but I would shoot with either camera (the Olympus being easiest to edit) and import to a MacBookPro for viewing, editing and storage.
