I have the D780 and love it. I had a 750 and loved the pictures but the controls could be cumbersome for me. Over the years I've had a half dozen or more operations repairing injuries to my hands so the ergonomics are important to me. The touch screen on the 780 is a dream come true. It can control settings, menus, playbacks etc etc. The customizable menu and button settings are great and the menu appears to be more complete and easier to use.
The image quality is easily as good as the 750 and possibly a shade better but I have only had it for a couple of months and it is too early to say for sure---but it is at least as good.
The autofocus system is outstanding and has worked great for moving wildlife shots. The faster maximum shutter speed comes in handy and the video is far better than the 750. I don't shoot much video but the options available offer a good selection of setups.
Both cameras seem to be about the same size and weight but I haven't taken a micrometer to them. The greatly improved weather sealing is a plus for me becuz I frequently shoot a lot outside and far from shelter.
I do not miss the built in flash but I only used it once or twice a year as a fill flash outdoors. However I do miss the infrared remote shutter release. I don't like being tethered by cable to the camera. I have been trying to us the wi/fi or Bluetooth to control the 780 but this will take some more practice as there seem to be some software conflicts that I still have to resolve.
I should mention that in between the 750 and 780 I had a Sony mirrorless and quickly learned to hate it. The picture quality was not bad but the controls were too small and too close together to operate quickly and comfortably. Also, the mirrorless viewfinder left much to be desired for me. Too slow, unclear compared to the optical DSLR cameras. The viewfinder was very, very difficult to see in brightly lit situations outdoors so I would be guessing at the settings---or even the picture framing. Also, the small mirrorless with a big zoom lens makes the camera front heavy and unbalanced and cumbersome to use. The mirrorless zoom was very heavy.
Some of the new features like image stacking and in camera double exposure might be of interest to you and the in-camera HDR performance appeared somewhat improved to me. Those features are handy to have when you need them.
The D780 has some of the features of a mirrorless camera that I liked and they do work well and come in handy on the 780. Definitely the 780 is the best of both worlds.
Even though I bought on sale because of a good trade in offer I wondered if I was wasting money giving up the Sony for it. I traded in an old digital camera with a serial number of about 3 and still got a good price for it.
I quickly learned that I made the right choice when I went to the 780. No doubt about it. What works and is important or useful for me might not be the same for you but since you are familiar with the 750 my thought is Go for it. You will be happy. I hung onto my 750 by the way cuz it is probably be best backup I could have.
