Canon EF 70-200, a mirrorless camera and a 2x extender question.

That is why I suggested the OP rent or buy where he can return and test it out. We all pretty much have financial limits on what we can or are willing to spend. The lens I hope to acquire one day is the 200-400 with the built in 1.4 extender. But it is $11,000 new I think. I looked at a used one a couple years ago that was $8,500. I have tried the 300 f/2.8 with my 2x and it is very sharp but it also made me realize how used I am to shooting zooms for the subjects I shoot. So for now I am happy with what I use.

Your 70-200 is a quality lens, you can do well with the 2XIII extender, I have one and use it with no issues, we have some old "pros" here who seem to put down anything they don't use or own. The 100-400 II is a better option but it is also somewhat expensive, the 2X can get you going and down the road you may choose to do something different. I bought mine refurbished from Canon, saved about $80 and knew that it had passed an inspection. I would highly recommend that you stay with the III version because it was specifically designed for use with the newer Canon lenses

I am not sure what you are trying to say. What is the crop feature in the EOS R? My comparison is made on the basis of a full frame canon DSLR. If I shoot at 200 and crop to a 400 image area I am throwing away a lot of pixels vs using the 2x Extender to get the image and not throw away any pixels. That’s my point... I hope that makes it clearer...

The crop mode on the EOS R only uses the part of the Sensor that is approximately the same size as a APS-C sensor, the camera is effectively cropping the 30mp image area down to about a 12mp or less image. The camera is doing the same thing as cropping the image as you have said. So, the image will look like an image shot with a 320mm lens but it will only be using about 12mp to create that image. My suggestion was simply that I would prefer to do that in post production rather than in the camera. Regardless, if you are going to use a small sensor extend the reach of your lenses you would be better off using a APS-C camera in my opinion.
