Has anyone had a manual printed up by Kinko, Office Depot or the like? There's so much to the manual I'd like to have it printed with a spiral binding so that it will lay out flat and I can have it with me at all times when I'm out learning to be a photographer.

yes - but it is expensive - better of print your own
If you have a smartphone your best bet may be to download the pdf to it. It's not exactly what you want but at least you can take it with you.

When you called them, what did they say?
Why not print just the 1 or few pages needed for a specific topic?

I just use my iPhone, tablet, or computer. The PDFs are searchable and hyper-linked. In fact, I put over 20 product manuals on my phone... I’m never without them.
Print your own. 3 ring punch and a binder.
When you are out learning to be a photographer, do you really need the entire manual? All those pages about available accessories, how to maintain your camera, warranty information, etc. Trim it down to only what is useful while you are shooting, and the manual will be much smaller.

That’s what I do. I use the hard copy at home and put a PDF on my iPad or iPhone for when I’m out and about or traveling.

You might also check with the camera service/customer support people to see if they'll sell (or maybe give?) you one. Just because one doesn't come with the camera doesn't mean one doesn't exist as a company product.
Printing yourself is easy but I don't have much knowledge on binding. Using standard binders don't make for nice books though.
I'll try to answer all the questions at once.
How do I know what I'll need?
camera manuals.com and photocheatsheets don't have a product for the D300.
I'll try loading it on my phone and see how that goes. I would never have thought of this one.
KEH has one but I've busted my camera budget for this month.
And now a question of my own, anyone used the Magic Lantern guides? I can get a used one from Amazon.
